Grandmom Horner’s Pumpkin Pie

This recipe is my absolute favorite for pumpkin pie. In fact, until I ate this pie, I did not like pumpkin pie at all! This recipe is from my husband’s great grandmother! One of the secret ingredients is nutmeg! The pie tastes so much better when you sprinkle additional nutmeg on top before you put it in the oven to bake! It also tastes best with fresh pumpkin and not canned pumpkin. I realize it is impossible to find fresh pumpkin this time of year, but I wanted to share the recipe with you since it is what we are eating this week!

Ingredients:

3 eggs

1 cup sugar

2 tbs. flour

1/2 tsp salt

1/2 tsp. cinnamon

1/2 tsp ginger

1/4 tsp. nutmeg (and extra for garnish)

2 cups fresh cooked pumpkin

1/2 cup milk

Beat eggs. Combine sugar, flour, salt, and spices. Add to eggs. Add pumpkin and milk and mix well. Pour into 9 inch deep dish or 10 inch pie pan with crust. Sprinkle with nutmeg. Bake at 375 for 50 minutes or 15 minutes then 350 for 45 minutes.

Gourmet Potatoes Recipe

This recipe is excellent for leftover potatoes of any sort. However, mashed and baked seem to work the best.

Ingredients:

Approximately 3 cups of mashed, shredded, or diced potatoes.

1 1/2 cups shredded cheese

3/4 cup sour cream

1/3 cup chopped onion

1 tsp. salt (may not need as much salt if you are using mashed or potatoes which have already been seasoned)

1/4 cup butter (may not need any if you have already made mashed potatoes)

1/4 tsp. pepper (may not need any if you have already added to mashed potatoes)

Paprika (garnish)

Directions:

In large mixing bowl combine all ingredients except paprika. Mix well. Spread into a buttered casserole dish. Sprinkle with paprika. Bake at 350 degrees until heated through (about 15-20 minutes).

Thanksgiving in a Pan Recipe

This recipe is SOOOOO EASY and DELICIOUS! It is a favorite of my family every time we have leftover turkey. Turkey is an inexpensive meat, so we eat it quite often especially when our beef supply is low as it is now.

Ingredients:

Leftover Cornbread Dressing

Leftover Turkey

Green Beans

Leftover Turkey Gravy

Cheese (optional)

Directions:

In pie pan or casserole dish, pack dressing in bottom and up the sides to form a crust. Place chopped turkey on top of crust. Place green beans on top of turkey. Pour gravy over entire pie. Sprinkle with cheese if desired. Bake at 350 degrees until heated through.

Monday Menu from the Farm

Over the weekend I cooked up the last two pumpkins from our 2011 garden. I pureed them using my Kitchen Aid Fruit and Vegetable Strainer Attachment. I had 15 cups of pumpkin from only 2 pumpkins. I thought I would make some pumpkin butter or just make up pumpkin pie filling and can it. However, my husband told me to just make some pumpkin pies. I made 7 pies with the pumpkin (2 cups per pie) and just added a little extra pumpkin to some of the batter. Needless to say, pumpkin pie will be on the menu this week! I also cooked a turkey, so there will also be turkey dishes too!

Breakfast- Eggs, Sausage, green peppers, and onion scramble, fruit salad, goat milk

Lunch- Salad with Turkey and Goat Cheese, carrots, and celery

Supper- Thanksgiving in a Pan, Gourmet Potatoes, Greens, pumpkin pie

Breakfast- Granola, Goat Milk, fruit

Lunch- Cheese, Apples, pickles, nuts (cleaning out open containers in fridge!)

Zucchini Hummus Recipe

I have frozen zucchini which I need to use to clear out space for the future veggies we hope to store! I found a recipe for zucchini hummus a few years ago and modified it to fit our family’s taste!

2 cups zucchini, chopped or shredded

1/3 cup fresh lemon juice

1/4 cup olive oil

2 cloves minced garlic (can use more or less depending on taste preference)

1 tsp. salt

Paprika for garnish

Place all ingredients into a blender and blend until smooth. Pour into serving dish. Garnish with a few sprinkles of Paprika if desired. Serve with your favorite veggies or salad.

How to Go Shopping with Children Part 1

I have been working on a series of posts concerning how to do things with children especially when you have several as I do. My first post was about Beginning and winning the hearts of your children. My second post was How to Coupon with Children. Now that you have got your coupons ready, the next part of the series will help you Go Shopping with Children.
When I first became a mother, I was finishing college. My mother-in-law and my mom took turns keeping my son on the days I had classes which was every day for the first two weeks, then it varied after that as I began student teaching. Most of the time I took my child with me on Saturday mornings bright and early (I’m talking around 5am!) to avoid the crowded stores. Since I was a new nursing mom it worked really well for me because he would usually sleep throughout the entire trip. He was about five months old when I finished student teaching, graduated from college, and began teaching for a friend (my former AG teacher). I taught basically for the remainder of the year and was due with baby number two during the process. My mother-in-law graciously volunteered to keep them both any time I wanted/needed to go anywhere. My mom was working, but also wanted to keep them at least one day a week. So, I made Thursdays my grocery store days, and she took off most every Thursday and watched the children. It was the year 2002. I did not have a computer at home much less internet access. Also, there was not much online at the time concerning couponing and bargain shopping anyway! So…I did the best I could with the ads from the paper (courtesy of my grandmother-in-law!), and got the best deals I could. It was very easy going by myself! Unfortunately, my mother-in-law went to work sometime between the third and fourth baby and my mom and dad moved just after the fifth baby was born. So…I was out of a babysitter. Now, I really NEEDED a babysitter and was left on my own. It’s okay. I never expected anyone and still do not expect anyone to help me with my children (other than my husband, of course!). They are my responsibility! However, it would be nice to have them as Tim and I keep adding children to the family! Anyway, by 2004 we had a computer and Internet. There still was not much on the Internet about deal shopping. I really did not use the Internet for couponing much until 2006-2007. In March 2007, I had my fifth child. Shopping with my children had been an absolute breeze. Then enters baby five! WHEW! I finally understood how the moms feel whose children pitch fits in the store. It was not until my fifth child that I ever had a child pitch a fit in the store. You know one of those fits where it does not matter what you do, they will continue crying until they get it out of their system! Yep! My fifth child was the perfect example. I feel God sent her to me to prove to me I do not have all the answers and HE is still in control! Being a mother of four children under four was not easy by any means, but it became much more difficult when the fifth one came along as I never knew when I fit would hit. She has overcome this stage, Thank the Lord, and the two after her have never gone through it. Clearly, evidence, ALL children ARE different, even with the same parents and raised in the same environment! Also, evidence, no matter how many children I have, I will never know all there is to know about being a parent!
Anyway, I had five children with the youngest nursing when I first began deal shopping/coupon shopping. I had taken them with me before, but it was more difficult having the nursing baby in the mix as well as figuring out what to do with everyone and how to organize the trip. We figured it out and came up with a system which works for us. It has been modified somewhat as the children grow both in age and in number! Part one is going to discuss the things to have prepared and completed before you head out the door with your passel of children!
  • Feed Your Children
Feeding your children is essential before you go anywhere. Make sure their tummies are full and they are happy. I do not recommend filling them up with junk food either. A nice complete meal with both protein and carbohydrate will last the longest and make them feel the best.
  • Plan Your Menu and Grocery List and Stick to It!
My children know if it is NOT on my list and NOT something which is a good deal, we are not going to purchase it. It is one of our rules. Having a grocery list also helps me to get through the store quickly and efficiently. I try to make my grocery list in order as things come in the store. For instance, if the produce department is the first department in the store, then I will write the produce items first. It is important to already know what you are after before you get there! It will save a lot of time. Also, as you know from the How to Coupon with Children post from last week, I let the children participate in the compiling of the list. It has also helped when we go to the store. If they know there are no produce items listed for the store we go to, then they know we can quickly glance over it and look for specials, and then be on our merry way to the next department!   • Pack Snacks
I mentioned feeding your children. Also, if you know you are going to be out a long time, be sure to pack snacks. My children are the crankiest when they are hungry and tired! Usually, with a quick snack, they will be revived and we can continue our shopping trip.
  • Take Extras (Clothing, Shoes, Diapers, Wipes, etc.)
Do you know how many times I have had a child have an accident? Too many to count! I have also been without extras when it has happened too! Not fun! I try to keep a small tote with extra diapers, wipes, and underwear. Then, before each trip, I will pack extra clothes for the children who will most likely have the accidents. When I am nursing, I will also take an extra blouse/shirt along for myself! You never know when you may need one!
  • Go Over Rules before You Leave the House
Keep your rules simple and easy to follow. Some of our rules include: Only the things on our list are what we get, there is no need to ask. Stay with your buddy and Mommy at all times. Listen to Mommy’s voice and pay attention when I say stop or go, etc. There are others, and you have to do what works for your family. I will be mentioning others as we go along with this section of How-To with Children.
  • Get Reinforcement and Support from Husband
Make sure your husband is in support of what you are doing and your children know he supports you and will follow through with what you have planned. My children know their Daddy and I are almost always on the same page. They know Daddy will reinforce and stand by Mommy in most every situation (there has not been one yet where he did not support me). Reinforcement from my husband has been essential in all areas of our parenting. If we were constantly in disagreement, I am sure we would not be able to do as much as we do with our children!

Spaghetti Squash Alfredo Recipe

To cook Spaghetti squash:

Cut in half length wise. Scoop out the seeds and fibers. Turn face down in a casserole dish. Add about a 1/2 inch of water to dish. Bake at 350 degrees until squash is tender. Scoop out strands.

In large pot, add spaghetti squash and your favorite alfredo sauce from store OR follow recipe below. Heat through. Serve with a salad, Garlic Herb Cheese Biscuits, or whatever you desire!

To make homemade Alfredo Sauce:

1/2 cup butter
1 pkg. (8 oz.) cream cheese (cut in quarters so it will melt faster)
1 cup half and half OR sour cream
1/3 cup Parmesan cheese
1 tablespoon garlic powder (optional)
pepper, to taste

In a medium saucepan, melt butter. Once butter is almost melted, add the package of cream cheese.  Once butter and cream cheese are mixed well together, add the cup of half and half, Parmesan cheese, garlic powder, and then shake pepper on top. Stir all together until well mixed. Once mixed well and forms sauce, remove from heat. Stir every few minutes until thickened.

National Foundation for Celiac Awareness Announces Gluten-Free Credentialing

The National Foundation for Celiac Awareness (NFCA) has designed new credentialing to increase food safety practices for those with Celiac Disease, gluten sensitivity, and gluten-free nutritional preferences.

“NFCA is expanding its GREAT Kitchens program due to inconsistent standards, a lack of understanding of the medical elements of a gluten-free diet and too often, a lack of transparency about kitchen practices within the restaurant sector that has put the health of patients with celiac disease and gluten sensitivity at risk,” states Alice Bast, President of the NFCA and a nationally recognized expert within the gluten-free industry.   

“Gluten-free families, especially those who are newly diagnosed, struggle with maintaining the diet even at home,” says Dr. Ritu Verma, Pediatric Gastroenterologist at the Children’s Hospital of Philadelphia and a member of NFCA’s Medical and Scientific Advisory Board. “While eating out is such an integrated part of our social fabric, the lack of consistent standards creates a stressful experience that erodes confidence and leaves many families preferring to opt out. I even see families that choose to forgo vacations and traveling because they can’t be sure that safe food will be readily available.”

Taco Quiche Recipe

1- 9inch pie crust (premade or homemade) Optional! You can make this without a crust!
1 3/4 cup leftover taco meat from tacos from lunch

1/4 cup chopped green onions
1 tbs. flour
4 eggs
3/4 cup milk
2 cups (8 ounces shredded cheddar cheese)
Sprinkle beef and onions into the crust (if using). In a bowl, beat the flour and eggs until smooth. Add milk, ; beat until smooth. Sprinkle Cheese on top of meat and onions. Pour into crust. Bake for 25 minutes at 375 degrees for 25 minutes or until center is set.

Wednesday Words of Wisdom- “Who Can You Trust?”

 

As I get older, it seems I trust fewer and fewer people including friends, family, and companies. Unfortunately, it seems as if someone is always being deceitful in some way. Fortunately, I do have some family and friends who I can trust as well as a few companies. However, there are only a few! It is sad and unfortunate. It seems as though everyone is out for himself or herself and is willing to do whatever it takes to make sure they are happy. Even if it means being manipulative or telling white lies or even just omitting information. My husband and I try to be honest with everyone including our children. It is often tempting to say things such as our dentist says in order to make children feel comfortable or not be scared (which I told my children is a lie). As he is filling a cavity, he will say that he is giving them happy juice and they have to close their eyes so it will not squirt them in the eye. They know they are getting a shot since I told them. I talked with the dentist about lying to them, but he did not see the harm. I feel differently. It is the same when companies make up stories and try to persuade you to purchase their items or “be on their team.” I feel it is important to be honest and just in all we do with everyone whom we encounter. These are my personal convictions. At the same time, it is not wise to tell all you know and participate in gossip, etc. I believe you know what I mean by being honest, or at least I hope you understand!

Recently, Monsanto has come up with a manipulative scheme. I also feel the USDA is doing it as well. HOW? you ask? Monsanto has recently come out with advertising trying to portray them as some company who LOVES families and small farmers. When I saw the advertisement on the internet, 'I thought, “Wow! This company seems like a neat company. Until the end it said, “Monsanto!” Then I said, “HOGWASH!” The USDA and President Obama have recently come out with “Know Your Farmer, Know Your Food Compass Campaign.” I say, “HOGWASH!” Of course, I adamantly support local farmers, however, I am also suspicious and cautious of this new scheme of Monsanto and the USDA. Monsanto wants nothing but power, and I feel they are willing to do what it takes to get the power they want! I feel the current government in the US is the same way. I am cautious about supporting the new USDA campaign because I fear it is another step in setting up a Communist society in our wonderful REPUBLIC of the UNITED STATES OF AMERICA. I could go on forever about how I feel, but seriously think about it. Why would Monsanto suddenly want organic farmers and local farmers on their side when they have for so long tried to shut them down? Same goes for the USDA. Just last year, we were confronted by members of the TDA about our beef business and were threatened to be shut down! They did not even specifically tell us what we were doing wrong nor did they try to point us in the right direction and coach us to thrive! We are not the only local farmers to whom they have done these things! As I said, I could go on forever, but I encourage you to do your own research and form your own opinions.

So, who can we trust when it comes to companies out there? Great question! I am still trying to decide for myself. Did you realize Cascadian Farms and Muir Glen are owned by General Mills who is owned by DuPont who is partnered with Monsanto? Look it up! I often post coupons for those companies, but in the back of my mind, I really wonder if I can actually trust them? Did you realize Monsanto purchased Seminis, Inc which was a leader in Vegetable and Fruit Seed production? Many of my favorite seed and garden companies are now owned by Monsanto and their GMO attitude! These companies include, Johnny’s Seeds (who once could guarantee certified non-GMO seeds, I no longer trust this claim!), Garden’s Alive, Park Seed, Burpee, Spring Hill Nursery, Stokes, and many more! The companies I listed above also have Organic Seeds, but can you really trust them? I am not so sure! The Council for Responsible Genetics has a list of GM-free seed companies and their addresses. Some of my favorites are still on the SAFE list such as Seeds of Change. Johnny’s Seeds is also on the list, but I say purchase at your own risk. I am no longer a customer of theirs!

Where can you get safe seeds? The best thing to do is to purchase heirloom varieties of seeds and save the seeds yourself from year to year, or get Heirloom varieties to plant from friends or family members. Bonny Plant which are sold at Wal-mart, Home Depot, Lowe’s, TN Farmer’s CO-OP, etc. are safe plants to my knowledge (please correct me if I am wrong). They have many different varieties of heirloom seeds. Bulk Herb Store currently has a sale going for their Heirloom seed package use code APRMPG for the month of April to get the 44 Heirloom Seed Packs for only $69.95 instead of $99.95. If you cannot grow your own food, try to purchase from local farmers.

As I said before, it is difficult to know who to trust. I am still purchasing General Mills products from time to time such as Muir Glen, Cascadian Farms, and Lara Bars, but I more than likely will not in the near future. We are really trying to raise the majority of our own food. We succeeded last year. Unfortunately, our new location is not very growing a garden friendly. Anyway, you should do your own research and not take my word for it either. Pray about what you should do and trust in God to lead you to whom you can trust!

How to Prepare a Roast

There are several ways to prepare or cook a roast, and I am sure many of you have better ways than what I will list. Below are my favorite ways to fix roast for our family.

  • For a thawed roast, place in crock-pot early in morning. Cover with one bottle of BBQ sauce and cook on low until supper.
  • For a thawed roast, sprinkle with salt and pepper or garlic salt, or favorite seasonings. Place in a shallow pan or roasting pan. Bake at 350 degrees until internal temperature reaches 165 degrees Fahrenheit.
  • For a thawed roast, place in a crock-pot. Add any raw veggies you desire (potatoes, carrots, turnips, onion, celery, etc.). Cover half way with water. Cook on low until meat reaches an internal temperature of 165 degrees Fahrenheit and veggies are tender.
  • For a frozen roast, place in shallow pan or roasting pan. Use the Convection Roast feature on a convection oven at 350 degrees and roast until internal temperature reaches 165 degrees Fahrenheit.

Great Read from Rodale “11 Scams in The Cereal Aisle”

This article will be a great introduction to my Wednesday Words of Wisdom this week entitled “Who Can You Trust?” According to a recent new report what you are getting when you purchase “natural” cereal are pesticides, GMOs and industrial waste. I was shocked to learn the information in this article about Barbara’s Cereal and their contaminant with GMO! Between 2007 and 2011, their organic choices dropped from 55 to just 20 percent! Fifty-five percent of the corn used in Puffins is genetically engineered and NOT even close to being natural! Sad smile Puffins has been one of our favorite special gluten free treats! No longer! The best thing to do is to look for the organic seal as your assurance that the foods were produced without deliberate use of GMOs by farmers!

Herb Goat Cheese Recipe

Ingredients:

2 quarts milk (I use fresh/raw goat milk)

1/4 cup apple cider vinegar OR lemon juice

1 tsp. salt

1/2 tsp. oregano

1/2 tsp. basil

1/4 tsp. thyme

Cheese cloth and colander

Pour milk in large sauce pot. Heat over medium heat stirring constantly until it starts to foam and rise. Gradually stir in the apple cider vinegar. Remove from heat. It should start to curd. Using a slotted spoon, spoon off curds over a bowl with a colander lined with cheese cloth. You are separating the curds and the whey. Pour curds into a bowl and stir in salt and herbs as listed or to taste. You can use the waste as a nice whey protein drink/shake (add some fruit, etc.), use it to fertilize your garden, OR you can use it in any recipe which calls for milk.

Another New Kid

Our last kid was born sometime Saturday evening or early Sunday morning. His name is Skunk.  He is from the third kidding of Cleopatra (we call her CLEO). His mom is Nubian LaMancha cross and his dad was Saanen LaMancha cross. Looking forward to drinking Cleo's milk as it is the best I have ever had!

Homemade Gluten Free Pancakes (Big Batch)

5 eggs

4 cups gluten free flour (I use rice)

1 tsp. salt

4 tbs. maple syrup OR brown sugar or other sweetener

1/2 cup olive oil or melted butter

3 1/2 cups milk

butter

Maple syrup, Jam, Jelly, Fruit, or other toppings

Directions: Whisk eggs until fluffy. Add remaining ingredients and mix well. Pre-heat a griddle, electric skillet, or pan. Will be ready to fix pancakes when water drops bead and skid across pan. Place butter in pan enough to coat. Cook pancakes a few at a time using slightly less than 1/4 cup batter per pancake. Cook 1-2 minutes per side. May have to adjust temperature throughout. Makes approximately 40 pancakes. Serve with favorite toppings! Enjoy!

How to Coupon with Children

Last week I began the series “How to with Children.” My first topic was Beginning. You must begin somewhere and the first thing to do is to make sure you have won the hearts of your children. Now, we will begin on other less inspiring tasks.

Nearly everything I do, I do with at least one (but usually 7) children in tow. Yes, I do mean everything. I usually do have an audience nearly every time I even try to use the restroom. It can be annoying at times, but I love my children. I know these years of their childhood are only for a little while. They will be grown before I know it, so I try to make the best of every situation.

One thing which does help our family is couponing. How in the world can I coupon and deal find with seven children? It is NOT easy. However, I have come up with a system which works for our family. It is very simple. I let the children help! Yep! They practice math, small motor skills, reading, and much more while helping me coupon.

My five year old and up (a total of five children) help with cutting the coupons. While we are cutting, the two youngest (3 and 19 months) will either color or I will give them some paper and some plastic scissors which barely cut anything and let them cut. I usually use the scrap papers for them to cut and draw on.

My older three children (the ones who read the best) help me organize the coupons and file them away. I have an accordion folder which is labeled by category. However, even my three year old can put paper products together and canned items together, etc.

Clipping coupons and sorting is an ongoing task. We do this task several times a week as necessary. It seems I am always printing coupons which is where I get most of my coupons.

Where we live now, we also get the grocery store paper ads in the mail every Monday. On Mondays, my oldest three or four will scan the ads with me and look for things we use which are on sale. We will then look for coupons in our folder which match the sale, or I will look for coupons online.

My second born who is the oldest daughter (age 9) will begin writing a list for me. She loves to write and loves any opportunity to write! This job is perfect and she begs to do it! As she writes a list for each store, we will compare prices for the best deal. For the stores which we do not get a paper ad, we will look online or on an app on my phone for their deals. Then, we will also check the blog we feel is best at coupon match-up for each store we frequent. I will add things to the list my daughter has started. Overall, we still do not spend more than an hour most weeks on couponing!

Before my older ones were able to help as much as they are now, they did what my littlest ones do now which is draw and color and cut while I work on things. It is a fun time for all of us to work together and everyone seems to learn something. I could put on a movie for them to watch or tell them to “go play,” but we would miss out on our time together and the learning experiences we have.

I will also say there are times my five year old will mess up on cutting and cut off the expiration date or bar code. It happens. I try my best not to get upset with her, but ask her to please try to be more careful the next time. I also let her know that I make mistakes too! I cannot tell you how many times I have tried to cut a collection of printable coupons from coupons.com or mambosprouts.com only to find out one of my papers was turned the wrong way or the coupons printed different areas on the paper or different sizes and I cut the bar code or expiration date off myself! Everyone makes mistakes! I try to point that out, but that we should learn from our mistakes and do our best each time to prevent them! I will also say since my children have been helping me cut out the coupons, I have had fewer mistakes! They really are great helpers and we have a great time together.

We save all of our scrap paper to either recycle, to print more coupons, or for the children to use for drawing or some other project. I also will use some of the smaller pieces to write down to-do lists or make notes for people. It is great to have scrap paper around when you need it!

Overall, have a great time with your children. Try to make things as fun as possible. I often worry too much about getting the task done and forget about having fun! I am getting better!

If I can coupon with seven children, I really believe anyone can!
