One favorite dish of ours is Gourmet Potatoes. I often substitute the potatoes with Cauliflower or turnips and have another great tasting side dish! Add some ham or other meat and it can be a main course. Below is the recipe for mashed cauliflower. You will find it is the same as the Gourmet Potatoes with Cauliflower used instead of potatoes.
Approximately 3 cups of mashed, shredded, or diced cauliflower.
1 1/2 cups shredded cheese
3/4 cup sour cream
1/3 cup chopped onion
1 tsp. salt
1/4 cup butter
1/4 tsp. pepper
In large mixing bowl combine all ingredients except paprika. Mix well. Spread into a buttered casserole dish. Sprinkle with paprika. Bake at 350 degrees until heated through (about 15-20 minutes).
