Farm House BBQ Muffins

This recipe was given to me by my Granny, but I think she got it from Taste of Home

  • 2 cups gluten free flour
  • 1/4 cup butter
  • 1 tsp. salt
  • 1tbs. baking powder
  • 3/4-1 cup milk
  • 1 pound ground beef
  • 1/2 cup ketchup
  • 3 tablespoons brown sugar (I use honey, maple syrup, or sorghum)
  • 1 tablespoon cider vinegar
  • 1/2 teaspoon chili powder
  • 1 cup (4 ounces) shredded cheddar cheese

Combine flour, butter, salt and baking powder. Use two forks or pastry blender to cut into coarse crumbs. Add milk until leaves side of bowl and a soft biscuit dough forms. Cut twelve biscuits and flatten into circles. Press each into the bottom and up the sides of a greased muffin cups. Set Aside. (You can also use canned biscuits if gluten is not an issue).

In a skillet, cook beef over medium heat until no longer pink. Drain. Stir in ketchup, brown sugar, vinegar, and chili powder. Stir until smooth. Add meat and mix well. Divide meat mixture among the muffin cups using about 1/4 cup of mixture per muffin cup. Sprinkle with cheese. Bake at 375 degrees for 18-20 minutes.
