- Supper- Leftover Quiche using Pork BBQ from Saturday, Gourmet Potatoes (use leftovers from Saturday), green beans
Tuesday
- Breakfast – Granola and Goat Milk
- Lunch – PB and Jelly Tortillas
- Supper – Beefy Jalapeno Corn Bake (Bake 2 one to eat and one for freezer), green beans, carrots
Wednesday
- Breakfast – Blue Corn Grits and Eggs
- Lunch – Leftovers from Tuesday Supper
- Supper- Spaghetti Casserole (Bake 2 one to eat and one for freezer)
Thursday
- Breakfast – Veggie Egg Scramble
- Lunch – Leftovers from Wednesday Supper
- Supper – Spaghetti Squash Supper from Freezer
Friday
- Breakfast – Children’s Choice
- Lunch – Egg Salad, Carrots, Celery
- Supper – Roasted Chicken, Cornbread, Great Northern Beans
Saturday
- Breakfast – Waffles (from freezer), Sausage, Fruit Salad
- Lunch – Chicken Salad Sandwiches (use rice bread in freezer), tomato soup (canned from last year’s garden not sure of the recipe I used! It was an experiment which turned out well, but I forgot to write it down!), salad (lettuce from garden)
- Supper – Leftovers, snacks
Sunday
It’s Mother’s Day. In Tennessee, the men in Tim’s family would cook for the women. However, we are not in TN. Tim says for me not to worry about meals on this day. He will take care of it! YAY! A day off (well, sort of, a mother NEVER has a day off!).
