Ham, Egg, and Tater Breakfast Casserole

Ingredients:

  • 3 cups shredded potatoes (about 3 medium)
  • 1/4 cup chopped green pepper
  • 1 small onion chopped
  • 3 tablespoons butter
  • 9 eggs
  • 3 tablespoons milk
  • 1/4 teaspoon pepper
  • 1 tsp. salt
  • 1-1/2 cups cubed fully cooked ham
  • 1/2 cup shredded cheddar cheese

Directions

  • In a large skillet, saute potatoes, green pepper, and onion until veggies are tender. In a large bowl, beat the eggs, milk, salt, and pepper; stir in ham. Stir in potato mixture. Spread into greased casserole dish. Sprinkle with cheese. Bake at 350 degrees for 30-45 minutes or until done.
