Gluten Free Waffle Recipe

Below is a recipe for a single batch which yields approximately 7 waffles. I will at least quadruple the batch, but more than likely multiply it by 6-10.

Ingredients:

3 large eggs

2 cups gluten free flour

1 3/4 cups milk

1/2 cup oil or melted butter

1 tablespoon sugar, honey, or maple syrup

1 1/2 tablespoons baking powder

1/4 teaspoon salt

Directions:

Heat waffle iron. Beat eggs in large bowl until fluffy. Beat in remaining ingredients until smooth. pour a scant 2/3 cup batter onto center of hot waffle iron. Check recommendations of manufacturer for recommended amount of batter. Close lid of waffle iron. Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve immediately. Repeat with remaining batter.
