Gluten Free Rice Flour Bread Recipe

Ingredients:

2 cups rice flour (freshly ground/milled works best)

1/2 tsp. salt

1 tbs. baking powder

3 eggs

2 tbs. oil or melted butter

3 tbs. honey or maple syrup

1/2 cup milk

1/2 cup sparkling water (such as Perrier)

Directions:

Combine dry ingredients. Add remaining ingredients and mix until smooth. Pour into a well greased loaf pan. Bake at 350 degrees for 45 minutes or until it tests done.

  1. Just made this bread with a couple of differences... I used melted coconut oil in place of the butter and to grease the pan. I also used almond milk instead of cow's milk. Lastly, I added 2 tablespoons ground flax seeds for added goodness! It came out tasting great! So now, I have made a wonderful gluten-free, dairy-free bread!! So easy and not as dense as I would of expected!! I suspected adding in the carbonated water with baking powder was such a clever way to give it some lightness! Thank you so much! Just one more thing... I think I used the wrong size loaf pan(9x5x3). It came out short. Not sure if doubling the recipe would be alright or not in same pan. If so, I'm wondering how long....   2. Sorry to take so long to respond. I just had a new baby and blogging had not been a priority. I am glad you liked the recipe. Thank you for sharing your alterations. It sounds wonderful. I have readers who have dairy and egg allergies as well.My pan is a little smaller. I use the glass Pyrex and I double for my larger pan. I will make that correction to the recipe above. We added Chia seeds the other day! Yum! Chia and flax can also be used instead of the eggs as well as tapioca flour.Blessings to you and your family too! :)
