Corn Bread Recipe


1 1/2 cups corn meal ( I use fresh ground blue corn from our farm)

1 1/2 cups flour (I use rice flour OR you can omit the flour and use a total of 3 cups corn meal)

1 1/2 tsp. salt

2 tbs. baking powder

1 1/2 cups milk

4 tbs. honey or maple syrup

3 eggs

6 tbs. melted butter


In large cast iron skillet or casserole dish, melt butter while preheating oven to 400 degrees. In the mean time, combine the remaining ingredients, add melted butter and mix well. Pour into greased (leave some melted butter to grease pan) cast iron skillet or casserole dish. Bake at 425 degrees for 25 minutes or until done.
