This recipe was published in Taste of Home. They changed the name to Cinnamon Raisin Bites. The quote they have from me is not accurate either. They also changed some of the ingredients as I did submit it as gluten free and I do not use canola oil for cooking or baking nor do I use cooking spray or fat-free milk! Anyway, below is my original version!
Ingredients
- 2 cups gluten free flour
- 1 tbs. baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup milk
- 1/4 cup oil
- 1/4 cup honey
- 1/2 cup raisins
Directions
In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg. In a small bowl, combine the milk, oil and honey; add to the dry ingredients and stir just until moistened. Stir in raisins. Drop by tablespoonfuls onto greased baking sheets. Bake at 425° for 8-10 minutes or until lightly browned. Remove to wire racks. Enjoy!
