We have lots of eggs! In fact, some of our chickens are even laying two eggs a day! I know, it is crazy, and I did not believe it at first either, but it is true! I am trying to incorporate more eggs into my menu plan. There are many different ways to fix them. My children love them just about any way they are fixed! We should also have lots of goat milk soon. Our goats are due to kid any day. We are anxiously waiting!
Monday
- Breakfast- Eggs, stir-fry veggies
- Lunch- Chili, chips, cheese
- Supper- Leftover Chili
Tuesday
- Breakfast- Apple Oven Pancakes, Fruit Salad
- Lunch- Peanut Butter and Jelly Tacos
- Supper- Chili Cornbread (leftover chili in bottom of of casserole dish, top with cornbread batter bake at 450 degrees until done)
Wednesday
- Breakfast- Applesauce Blueberry Pecan Muffins, scrambled eggs
- Lunch- Egg Salad
- Supper- Roasted Chicken, green beans, greens, sweet potatoes, deviled eggs
Thursday
- Breakfast- Oatmeal, Hard boiled eggs
- Lunch-Cheese, apples, celery sticks, carrots
- Supper- Leftover chicken in a casserole with leftover veggies
Friday
- Breakfast- Children’s Choice (Oldest children will choose what to eat and make the breakfast themselves)
- Lunch- Homemade Pizzas
- Supper- Any leftovers
Saturday
- Breakfast- Grits, bacon, eggs (Make turkey for Sunday)
- Lupper- Turkey Tortillas, salad
Sunday
- Easter Sunday! We will have a light breakfast probably either homemade granola or muffins. Then a big lunch and leftovers if we are still hungry for supper.
- Lunch- Turkey, Rice Dressing, Pumpkin Pie (we have pumpkins we need to use!), green beans, deviled eggs
