Gluten Free Homemade Granola Recipe

I have two different granola recipes which I use. They are both quick and easy. I make them according to what ingredients I have on hand.

Homemade Granola Recipe 1

4 cups Gluten Free Arrow Head Mills Puffed Rice Cereal

4 cups rolled oats (I get organic and gluten free)

1 cup dried or finely chopped fresh fruit

2 cups chopped pecans or walnuts

2 teaspoons vanilla extract

1/2 cup olive oil

1 1/2 cup maple syrup or honey or sorghum

In a large mixing bowl, combine the oats, cereal, dried fruit, nuts, and vanilla. Add the oil and stir evenly. Pour in maple syrup and mix well until evenly moistened. Mixture should be crumbly and sticky. Spread mixture in a cookie tray and bake at 400 degrees for 10 minutes. Stir and bake until desired crispiness. Serve immediately or cool and store in an airtight container.

Homemade Granola Recipe 2

4 cups oats

4 cups Puffed Rice Cereal

1 stick butter

1/2 cup honey

1 cup chopped nuts

1 cup chopped dried fruit

Preheat oven to 400 degrees. In a large saucepan or Dutch oven, melt butter and honey. Stir in remaining ingredients. Stir well. Serve as is or place on a cookie sheet and put into oven for 10-15 minutes or until golden brown or desired consistency.
