Squash Casserole and Slaw

Tonight for supper we had Squash Casserole and Slaw. Most all of the ingredients were from our garden/farm!

Squash Casserole Recipe: (Adapted from a recipe from a friend)

2-3 Medium Summer Squash (yellow, zucchini, or patty pan) cut into chunks

1 pound ground beef

1 small onion

2 small garlic cloves

1 tsp. oregano

1/2 cup bread crumbs (I used leftover corn bread crumbs I saved in the freezer from a precious meal)

White Sauce (Butter, Flour, Milk, Salt, Ground Mustard, Pepper)

Salt

Pepper

Cheese

Cook squash in a small amount of water. Meanwhile in another skillet brown ground beef, onion, garlic. Add oregano and 1 tsp. of salt and a half tsp. of pepper. Stir in bread crumbs.  Remove and set aside. In same skillet, make white sauce. Melt 1/4 cup butter, add 1/4 cup flour stir, gradually add 2 cups milk, 1/2 tsp. ground mustard, and salt and pepper to taste. Stir in ground beef mixture. Drain squash and place half of squash in a 9x13 casserole dish. Top with half of beef mixture. Repeat layers. Sprinkle with cheese. Bake at 350 degrees for 20-30 minutes or until heated through and cheese is melted.

Slaw Recipe: (My Mom’s Recipe)

Shredded Cabbage (1 medium size head)

Shredded Carrot

Mayo

Salt

Sugar

Shred Cabbage and carrot. Add about 1/2 cup mayo, 1/2 tsp. salt, and about 1/8 cup sugar. Stir well. Taste. Add salt and sugar to desired taste. You can also substitute Stevia for the sugar, but it is not as good!

    Cabbage Lasagna

    Instead of sharing a menu each week, I am going to try to share some recipes each day to use things from your garden or farm! YUM! We are having this dish tonight along with green beans, and squash and onions from the garden! Hopefully, I can update with a picture later!

    This recipe is originally from the Protein Power Diet Book. However, I have adapted it to fit our family and what we have on hand! Adaptations are noted in parentheses!

    1 medium to large head of cabbage

    1T olive oil

    2 garlic cloves, minced or pressed

    1 medium onion, chopped

    1 green bell pepper, chopped

    3/4 lb ground beef (I use 1 pound)

    1 6oz can tomato paste (I use a 26 ounce jar of Spaghetti sauce OR some homemade spaghetti sauce from our garden. Which ever I have on hand. Omit the tomato sauce below.)

    1 8 oz can tomato sauce (I use a 26 ounce jar of Spaghetti sauce OR some homemade spaghetti sauce from our garden. Which ever I have on hand. Omit the tomato paste above.)

    1t dried oregano

    2 t salt

    1 t pepper

    1 c grated mozzarella cheese (I use whatever cheese I have on hand)

    1/2 c ricotta or cottage cheese (I use ricotta/vinegar cheese from our goat milk)

    1/2 c freshly grated Parmesan

    Preheat oven to 350. Wash cabbage and remove the tough outer leaves. Cut the head in half. Carefully peel back the leaves, trying to keep them intact. Arrange the individual leaves on a steamer basket or tray and steam until nearly tender, about 3-5 minutes.

    Put olive oil in a large skillet over medium high heat. Sauté the garlic, onion, and green pepper until the onion is translucent. Add ground beef and brown thoroughly. Drain or skim the fat.  Add tomato paste and sauce and seasonings and combine well.

    Coat a 9x13 baking pan with a little olive oil. Line the bottom with a layer of cabbage leaves. Top with half of the meat mixture. Add a third of the mozzarella and half of the ricotta/cottage cheese. Add another layer of cabbage leaves, the remaining half of the meat mixture, another third of the mozzarella, and the remaining half of the ricotta/cottage cheese. Top with the remaining mozzarella and finish by scattering the Parmesan on top.

    Bake, covered, for about 20 minutes. Uncover and bake for 5 minutes more.

    This recipe is gluten free, and nearly carb free! It is wonderful and can also be used with Swiss Chard instead of Cabbage! We have both in our garden. I have nearly all the ingredients in our garden!

    Homeschool Freebies June 16, 2011

    The last two weeks we were so busy here on the farm, and this week is no different. However, I did want to try to get another homeschool freebie post up for you for the summer.     • Tellico River and Bald River Falls and Cherohala Skyway Often overlooked! Wonderful place to take the family. Absolutely beautiful. Especially nice if you want to get away from the hustle and bustle of Pigeon Forge and Gatlinburg area!

    Monday Menu from the Farm

    With our hectic and unpredictable schedule, I am not going to even try to make a menu this week! I am going to rely on my pantry, freezer, and garden to supply the meals! I have a many standbys we use for hectic weeks. I also LOVE having my crock pot to have going all day so supper is ready when I get home! Below is a list of some of the things which we have been enjoying from the garden and farm to supply our meals! I have not had to purchase groceries this month. I do have a few coupons which will expire at the end of the month and I plan to use at some point. Otherwise, I do not plan to go to the grocery store this month as God is supplying most of our needs here on the farm! Praise the Lord!

    • Eggs!
    • Goat Milk
    • Greens (Turnip, Collard, and Kale our Mustard greens have fizzled)
    • Onions
    • Brussels Sprouts
    • Black Raspberries
    • Early Blackberries (need rain to make them better, they are ripening about a month earlier than usual this year and they are small)
    • Carrots
    • Broccoli
    • Cauliflower
    • Jalapeno Peppers (just have a few)
    • Yellow Summer Squash (should have some by the end of the week!)
    • Turnips
    • New Potatoes
    • Beets
    • Beef (just took some to the butcher and will have more next week to add to our freezer!)
    • Chicken (will be ready to process in another week or two)
    • Goat Cheese made from our Goat Milk (I am continuing to experiment with the cheese. Any suggestions for flavors will be appreciated!)
    • I am also experimenting with gluten free breads, crackers, and chips using the blue corn from our garden as well as using Oats and Rice Flour.

    Touring the Titanic Museum

    On Saturday, our family of nine had the privilege and blessing of touring the Titanic Museum in Pigeon Forge, TN. We were asked to tour and check out the new Audio Tours which are offered. Overall, we had a wonderful time! It was a nice little break from our routine here at the farm! We had never been before, but have studied the Titanic in our homeschool, so it was very much enjoyed by my children as well! I wanted to take the time to share with my readers our experiences as well as more information in case you and your family ever want to tour the Titanic Museum! My husband and I have wanted to tour the facility since it has been opened. Even though he was homeschooled and I went through public school, our favorite subjects to study in history were the Titanic and World War II!

    Audio Tour

    When you enter the facility you are given a remote control looking device which will help you with your tour. There is an ear piece to listen and a cord to hang it around your neck. There are two tours the adult and the youth. The Adult version is denoted by blue numbers throughout the museum. The Youth version is denoted by red numbers. You simply push in the number to which you want to listen and hit enter. Then, place the ear piece of the device to your ear and listen. It was very easy to use. I tried to listen to both the adult and youth versions just to see what they were like. The Youth is definitely more exciting, but there are sometimes a few minor details omitted. My children loved carrying these around and listening. They wanted to find EVERY number and listen to EVERY clip! Even my four year old could use hers by herself. My two year old knew to push the number then the play button. He just did not get the numbers exactly correct! The downside we found is if you do not listen to your tour, you are going to miss out on a lot of details. I also forgot to ask what the hearing impaired are to do about touring.

    Children and Homeschool Friendly

    The facility is definitely children and homeschool friendly. There are a few things you should be aware of before going.

    • Make sure to take the children to the bathroom before beginning. There is a restroom halfway through the tour, but we did not make it quite that far before some had to use the bathroom! Be sure to stop again before leaving if you have a long drive back home or to your next destination.
    • Be ready to lift shorter children to see the taller displays. There are many displays which were too high for even our oldest who is nine years old to see.  My nine year old is our history buff and was the most interested in seeing and reading and listening to every exhibit! He is of average height, but was disappointed he could not see the displays! I was thankful my husband was with me to help lift the children! We got quite a workout by the time the tour was complete!
    • Although we did not bring a stroller, it is stroller friendly. There is an elevator to go to the second floor. However, if you choose to use the elevator, you will not get to walk up the grand staircase which was one of the highlights for my children!
    • There is a place for children to play called the Tot-Titanic. My children loved this place. Even my nine year old enjoyed working the puzzle of the Titanic which was on the wall and trying his best to steer clear of the ice berg!
    • One of the highlights for my children was at the beginning when they were encouraged to TOUCH things in the museum! They took advantage of this prompting and touched all they could! From loading coals into the furnace to touching the iceberg, they were touching and had a great time. Fortunately, nothing was broken in the process either!
    • The tour is very educational for homeschoolers like us. They also offer discount rates for groups including homeschoolers! There is even an education section on their website for homeschoolers! Be sure to look at the tabs on the side of the page for more educational helps!
    • You are given a boarding pass at the beginning of the tour. The pass has the name of a passenger. You can look on the wall near the end of the tour to see if you were a survivor or not. My children are going to research each of their characters even more as a homeschool assignment.
    • There are no cameras or videos allowed inside the facility.

    Overall, we had a wonderful time. We are very thankful to Erin Wicker for including us in this tour! If you go or have been before let me know what you think!

    “My favorite part was when the stairs flooded! That was cool!” Chandler age 7 (He was referring to an exhibit which was recreating how it would have looked on the lower decks with the water running down the stairs.)

    “I liked walking on the different slopes which showed what the boat was like while it was sinking and the people were trying to get off!” Michaela age 8

    “I liked trying to miss the iceberg in the Tot-Titanic, but I never missed it!” Timmy age 9
