Menu for March 1-5

Last month we had an Eat from the Pantry Challenge. For most of this week, we will still be eating from the pantry as my shopping day is not until nearer the end of the week! We are completely out of some things we LOVE to have on hand in our house. One of these being butter. Today I experimented with some Coconut Oil and made some chocolate cookies. We were also out of oats which are called for in the recipe. I substituted Millet for the oats. Most of them turned out pretty good, the others not so good! Anyway, it was fun to try! We still have plenty of beef, green beans, and eggs which will make great meals!

Tuesday-

  • Breakfast- Cereal with Coconut Milk
  • Lunch- Turkey Tortillas
  • Snack- Popcorn, Chocolate Millet Cookies
  • Supper- Chuck Roast, Green Beans, Carrots, Cookies

Wednesday

  • Breakfast- Eggs and sausage
  • Lunch- Leftover Roast on Tortillas
  • Supper- Leftovers Quiche, green beans

Thursday

  • Breakfast- Apple Sauce Millet Muffins
  • Lunch- Egg Salad Sandwiches
  • Supper- Crockpot Spaghetti

Friday

  • Breakfast- Hard Boiled Eggs, Sausage
  • Lunch- PB&J Tortillas
  • Supper- Meatloaf, mashed potatoes, green beans

Saturday

  • Brunch- Blue Corn Grits, sausage, eggs
  • Lupper- Leftovers
