    Organic Highways Restaurant Directory Download

    With all the talk about the safety and quality of our food, a question arises in my mind, “Where if anywhere is it safe to eat out?” I think the question varies from region to region, state to state, and city to city. One of the resources I found while searching for places safe for eating out is Organic Highways. You can go to their site and download the entire directory for $7 which may be worth the money if you travel often. However, with modern technology you can also access it from your blackberry or other cell phone. Unfortunately, it does not list any for East Tennessee, but I know there are a few places which I consider safe to eat. One of those is Earth Fare.  Unfortunately, there is no way to know where each restaurant gets their food unless you ask. I can tell you now, the chain restaurants which want to make sure all their food tastes the same no matter what city or country, are more than likely NOT what I consider safe. These restaurants want uniform tasting food; therefore, their best suppliers are factory farms. Some of the restaurants in this category include, but are not limited to McDonald’s, Wendy’s, Krystal’s, Burger King, etc. Essentially, you have to make your own decision when dining out as it is a personal choice and a risk you have to take.

    I know a few restaurants who try to use organic and/or natural or locally grown ingredients; but cannot afford to do so with all of their food. One of the few in my area is locally owned and operated. It is the Dinner Bell in Sweetwater, TN. There are also restaurants who purchase lettuce and other vegetables from local high school greenhouses/FFA programs and serve them in their restaurants. You will have to ask around in your area to find the safe places to eat.

    Below are some restaurants which serve healthy and/or organic foods. Some may be in your area.

    If you have a local family owned restaurant in your area, I would choose them over some of the chain restaurants any day. The food may not be organic or local, but you will be supporting a local business! Many of the local businesses such as Dinner Bell do support local farmers too!

    You can also go to Dine Green to find a restaurant in your area which has been been deemed “Certified Green.”

    Other places to find listings for “safe” restaurants near you are Eat Well Guide and Local Harvest.

    Wednesday Words of Wisdom- Enjoy Your Summer!

    If you are like me, you have lots to do during the summer months! In fact, for me the summer is often the busiest time of the year, and we are not even officially having school at our house! We have the garden and yard to care for as well as other projects which we reserve for warm weather not to mention canning and hay season! This summer we will also add a new baby to our family. Then, there are music lessons, dentist appointments, church, etc. etc.! Sometimes the never ending work takes all my time from my children as well as time I could be spending with the Lord or doing something to pamper myself or my husband! I wanted to take time today to list some fun, inexpensive ways to enjoy your summer and just let things go! It will all get done eventually, and it does not HAVE to be absolutely perfect either! Remember to let the children be involved! Do things together as a family! It does not have to be an expensive trip or even require you spend any money at all! It may be one day a week or a few hours a day! JUST MAKE THE TIME TO HAVE FUN!!  The summer will be over before you know it!

    • Take the children on a picnic! You can have it in your yard or go to a park! Since we have quite a bit of acreage, we will take a hike and have a picnic somewhere where we do not often go on our property. The children love to help pack the picnic and choose where we are going to enjoy it!
    • Have a camp out in the yard. My children LOVE to camp out under the stars with or without a tent! If you live in an apartment, you can let them camp out on the patio or you can build a tent indoors with sheets and blankets and camp out indoors! We have camped out indoors many times! Outside you can build a camp fire and roast hot dogs and marshmallows! Sing camp songs and play games!
    • Have a game night. Get out board games or invent your own on some of the hot summer nights! Since it stays daylight longer during the summer, you can play hide and seek or tag or other outdoor games!
    • Make homemade ice cream! I have never met a child who does not love ice cream! Everyone can be involved in the ice cream making process. You do not even have to have an ice cream maker! We made ice cream one year just by thoroughly beating the mixture together with a stand mixer. The ice cream was creamy and delicious! Let the children choose the flavor to make or even invent flavors!
    • On those rainy days, you can create plays or skits with the children and perform them for Dad when he gets home in the evening. My children love inventing their own skits or having a talent show. Sometimes they want to make their own skits or plays without my help so I can be surprised too. Sometimes they do not make much sense, but they are having fun and they enjoy having attention from Mommy and Daddy.
    • Turn on a sprinkler or run a water hose for the children to play in the water. Kiddie pools are inexpensive and even my 8 and7 year old have enjoyed playing in them this summer.
    • One thing we are working on this summer is singing together as a family. Tim and I play the piano. Some of the children play musical instruments now as well, and we are trying to get songs together the rest of us can sing while the others play their instruments. It is fun and the children enjoy it! Even if you never perform for others,  just sitting around singing songs is great fun for the entire family!
    • If you are feeling overwhelmed, just STOP what you are doing and grab your children. You can read to them or tell them stories from your childhood or even stories about things they did as babies!

    The possibilities are endless, but it IS possible to have fun with your children during the summer and get all your work accomplished too! I have to remind myself often as I am so goal oriented! Once I begin working on something, I do not like to stop until I am finished! You can always watch movies with your children, but we do not do much of that in our house. There really is not time, and we have much more fun spending time together instead of sitting in front of the TV. You can always ask your children what fun things they want to do this summer as a family. All the things I mentioned above are things we can do AT our house without spending much if any money! Remember, your children are only young once! Take time to be with them now while they are young, and they will want to be with you more when they are older! I hope all of you have a great summer! I will love to hear things you do with your children to have fun during the summer!

    Organic on a Dime

    This week I am proud to introduce a great new organic blog called Organic On A Dime. Michelle has been purchasing organic on a budget for a while now. She started he own blog for deals in her area of Ohio. She originally started purchasing organic when she has her first child. Then she had another child and other things happened in her life, which caused shopping organically to be placed on the back burner. About six months ago they watched Food Inc. which made them reevaluate where their food comes from. Now, they strive to buy fresh whole foods and to know what is in their food and where it comes from. She had been using coupon blogs in the past, but not many catered to organic and natural shopping. She learned to do the coupon matchups herself and learned to become thrifty, use meal plans, and stock up on what was on sale. Thus, she was inspired to begin her own blog. She poses grocery store match-ups, coupons, and daily discussions on taking baby steps to living a greener life. Her children are ages 3 1/2 and 2 and she enjoys taking them to the farmer’s market. She is raising them to be aware of the environment and the impact they have on it.

    Nashville Flood 2010

    Below is a great video showing the damage the flood caused to Nashville. It was never a big media story and still is not. However, everyone is moving on and helping each other! There is a lot of work to be done, but Nashville will revive! It is a sad video to see the damage and what these people had to go through as well as to think about the months ahead of them! I was saddened to see many of my favorite places under several feet of water. Pray for Nashville and help if you can!

    Food Inc.

    A friend of mine pointed out the movie Food Inc. to me. Fortunately, it is posted on You Tube in 10 parts for you to view! I have posted them here for your convenience. It is an informative movie about how and where our food is produced. I have yet to watch the entire movie. However, what I did watch was very informative. There were many things of which I was aware, but many more things I learned! As an Agriculturist and a person with a degree in Agriculture, I have always been opposed to factory farms, cloning, genetically engineered crops, pesticide use, etc. In fact, I was one of the very few at the University of Tennessee Ag Campus less than 10 years ago who promoted Organic Agriculture. I was very much alone in my opposition. I made several speeches and wrote papers in support of my beliefs. Unfortunately, the men and women in Agriculture are more interested in how quickly they can make more money and less interested in the safety of food for the consumers! After this video, I will definitely think twice or even three times before I let my children consume fast food as well as other foods. I hope to have more tips on how to eat safely and affordably soon! I hope you enjoy the movie. If any of you have seen it, I will love to hear your comments. In the meantime, if you are interested in purchasing locally grown beef, you can check out our website here. I should also add, we were able to discuss our beef business and advertising with an Extension Agent who was very generous to give us suggestions to help our advertising not leave room for any questions or doubts as to what we sell.     Gluten Free Dairy Free Twinkie Recipe!

    Gluten-Free Dairy-Free Twinkies
    3 eggs, separated
    ¼ cup grapeseed oil
    ¼ cup agave nectar
    1 tablespoon vanilla extract
    1 tablespoon lemon juice
    6 tablespoons coconut flour
    ½ teaspoon baking soda
    ¼ teaspoon celtic sea salt

    1. In a large bowl, whip egg whites to stiff peaks, then set aside
    2. In a medium bowl, whip egg yolks until pale yellow, then whip in grapeseed oil and agave
    3. Whip vanilla and lemon juice into egg yolk  mixture
    4. In a medium bowl combine coconut flour, baking soda and salt
    5. Blend flour mixture into egg yolk mixture, then whip ingredients together until smooth
    6. Gently fold egg whites into yolk-flour mixture
    7. Spoon batter into Twinkie molds until they are half full (you will get 8 twinkies)
    8. Bake at 350° for 11-12 minutes
    9. Remove from oven and allow Twinkies to cool

    Gluten-Free Dairy-Free Twinkie Filling
    2 egg whites
    ¼ cup agave nectar

    1. Whip egg whites to stiff peaks
    2. Blend in agave and re-whip until stiff peaks form again
    3. Place filling in Twinkie filling injector
    4. Place cooled Twinkie flat side up and inject filling into Twinkie in 3 spots on its flat (bottom) side
    5. Serve

    Yes, this filling recipe includes raw egg whites and yes, my family and I eat raw egg on a fairly regular basis.  If that's not your thing, then you could fill the Twinkies with agave sweetened whip cream, which I think would taste delicious.

    Be sure to fill your twinkies just before eating.  Why?  The sponginess of the Twinkie cakes quickly absorbs the filling.  When I left mine over night, all of the filling was absorbed into the cake.

    First Course- Cheese Fondue- Specifies to request it be made with corn starch and no mirin. Request a GF dipper bowl.

    Second Course- Lettuce Wraps- Request to substitute dressing.

    Third Course- Choose from Fondue Feast, Fondue Fusion, Lobster Indulgence- Specifies to request Gluten Free options on all three options. All four cooking styles can also be Gluten Free.

    May/June Month of Garden Chores

    • Set out Tender Annuals- The last frost date is usually around Mother’s Day, so this is the busiest month for planting. By the end of the month, the early strawberries will be ready to eat. Replant new strawberry plants in a new area every three years to keep them healthy. Mow the strawberry beds after harvest to increase vigor and reduce disease.
    • Direct Seed in Garden:

    Cucumbers, pole beans, bush beans, lima beans, Crowder peas, field peas, corn, okra, carrots, summer squash, pumpkins, chard, lettuces, cantaloupe, watermelon, cilantro, dill, annual flowers

    • Transplant

    Tomatoes, tomatillos, sweet potatoes, leeks, romaine, peppers, eggplant, summer squash, winter squash, basil, perennial herbs, annual herbs, and annual flowers

    • Put up bean poles
    • Steak or cage tomato plants (June)
    • Thin plants where needed
    • Make compost
    • Side dress plants with compost
    • Hoe weeds when small
    • Scuffle hoe between tows
    • Harvest plants when ready. Pick peas daily for continuous harvest. Other plants ready in May include: Spinach, salad greens, radishes, cilantro, chives, mints, dill, lettuces, arugula, onions, parsley, oregano, thyme, sage, tarragon, strawberries, broccoli, cauliflower. Additional Plants ready for June include: green beans, cucumbers, summer squash, new potatoes, beets, black berries, raspberries.
    • Japanese beetles, potato beetles, and squash bugs typically arrive mid-June. Get row covers on before they arrive or knock them off into a mixture of water and dish soap (great project for children).
    • By interplanting beans with corn and under sowing with white Dutch clover, there will be two crops from one space and the soil will be fed at the same time. When corn is knee high, plant beans in every other pathway between corn rows. Plant cover in the remaining pathways.

    I cannot emphasize enough how important it is to purchase locally and support your local farmers! Tim and I have recently been contacted by someone with the USDA who is interested in shutting our beef operation down! There are NO violations, he just heard our ad on the radio and did not like the way it sounded. He gave us a call and talked with Tim. He said he would call back, but never has. We are working with someone to change the wording of our radio ad to prevent criticism from the USDA.

    The government wants to control it all! They do not want the small farmers to make it because they want to be the ones who control our food sources. Unfortunately, it is the same mind set in communist countries. I should remind you that all of the recalls you hear about are NOT from the family farms, but from the big government corporations!

    Your local farmers are honest hard working people who have families and are trying to make a living. They are not out to get your money or to control what you eat or what you buy.     Nashville Flood Relief

    Last week I mentioned helping others in need. Now you can help the victims of the flooding in Nashville. You can now use your swagbucks to support the Nashville Flood relief.

    How Is Your Garden Growing?

    We are having great success with our garden so far this year. In a few weeks we will have cherries and black raspberries. I cannot wait! So far, we have eaten lettuce, onions, broccoli, asparagus, and some new potatoes from our garden this year. There was not enough Broccoli or Asparagus to put in the freezer. The broccoli is pretty much finished. Unfortunately, we had a few very hot days which caused most of the broccoli to bolt. Otherwise, we would have had lots of broccoli!

    We still have left to plant our summer and winter squashes! I am waiting on my dear husband to till the place I need to plant them. Since I am pregnant, I cannot do it myself (well, I could, but I know better!:)). He put up hay last week and now it is raining again, so it may still be another week before we get our squash planted. Otherwise, all is going well.
