Menu From the Farm

I have been posting recipes using things from our garden/farm.

Today I canned spaghetti sauce and want to share that recipe. It is a recipe I made up last year. It is so delicious. I am not a big tomato eater and really only like fried green tomatoes. As far as spaghetti goes, I would rather have a cheese based sauce than a tomato based sauce at least that is how I felt until I came up with the following recipe last year. I LOVE it and do not want to eat any other spaghetti sauce! I opened our last jar from last year a few weeks ago. It smelled so delicious, and I could not wait to be able to make some more again this year. My tomatoes are slowly turning red, but they are turning. We finally had some much needed rain today which I hope will help with the tomatoes turning red. Anyway, below is the recipe. Let me know if you try it and what you think!

Hannah’s Homemade Spaghetti Sauce

Ingredients:

4 quarts tomato sauce

2 cups chopped bell peppers

2 cups chopped onions

2 cloves garlic, minced

2 tsp. black pepper

2 bay leaves

1 tsp. oregano

1 tsp. basil

1 tsp. thyme

1 Tbs. salt

1/8 tsp. crushed red pepper

Instructions:

Combine all ingredients in a large stock pot or dutch oven. Bring to a boil. Reduce heat and allow to simmer until desired thickness. Place in quart or pint jars leaving 1/4” headspace. Place two piece lids on jars. Place into a boiling water bath canner for 15 minutes or until jars are sealed. Makes 10 pints or 5 quarts.
