I think we will be somewhat back to normal this week. At least we will not be gone quite as much.

Supper- Green Chili Stew
Breakfast- Homemade date, cereal, and nut bars (Experiment, I will share the recipe if it turns out good!), goat milk
Lunch- Picnic includes carrot sticks, cheese sticks, applesauce, and ice cream
Supper- Leftover Stew

Lunch- Turkey Soup (I canned it earlier this year.), corn bread
Supper- Pecan Crusted Salmon, mashed cauliflower, green beans

Supper- Chili and cornbread

Recipes
- Homemade Granola Recipe 1
4 cups oats
1 cup puffed rice cereal
1 cup dried fruit (raisins, chopped dried apples, chopped dates, chopped prunes, etc.)
1 cup chopped walnuts, pecans, almonds, or other nut
1 tsp. vanilla extract
1/4 cup olive oil
3/4 cup maple syrup
Preheat the oven to 250 degrees. Combine the oats, rice cereal, dried fruit, nuts, and vanilla in a large mixing bowl. Add the oil and stir evenly. Pour in the maple syrup and mix well until evenly moistened. Spread mixture on a cookie sheet and bake for 90 minutes (or put in a 450 degree oven for 10-15 minutes). Stir every fifteen minutes until mixture is golden brown and dry. Store in an air tight container after allowing to cool.
- Homemade Granola Recipe 2
4 cups oats
4 cups Puffed Rice Cereal
1 stick butter
1/2 cup honey
1 cup chopped nuts
1 cup chopped dried fruit
Preheat oven to 400 degrees. In a large saucepan or Dutch oven, melt butter and honey. Stir in remaining ingredients. Stir well. Serve as is or place on a cookie sheet and put into oven for 10-15 minutes or until golden brown or desired consistency.
2 pound beef stew meat
1 cup chopped onions
1 can (15 oz.) great northern beans, rinsed and drained
2 cups diced tomatoes, undrained
1/2 cup chopped green chilies
1 cup water
3 beef bouillon cubes
1 garlic clove, minced
1 tsp. sugar
1 tsp. salt
1/4 tsp. pepper
Brown beef and onions in skillet. Transfer to a 5 qt, Crockpot. Add remaining ingredients and stir well. Cover and cook on low for 7-8 hours or until beef is tender. Serve with cheese, salsa, sour cream, etc.
