It's Earth Day!


I remember when I was in seventh grade. We actually had a play in choir which was called Every Day is Earth Day. That was about 15 years ago or more. I played the part of one of the Earth Day people who had a small voice in conservation. It was highly emphasized that year and a few years after that to conserve energy and to reduce, reuse, and recycle. We had a special day to the Oak Ridge American Museum of Science and Energy where they gave us booklets about conserving energy (I still have mine!). I believe everyday should be Earth Day. God gave us a wonderful world and we should do our best to take care of it. It is true, for us Christians it is not our permanent home. However, God does tell us to take care of what he has given us and he will bless our efforts. So, I challenge all of you to take care of our Earth as well as your health. It will pay.

Menu from the Farm

Here is a preview of some of the things we eat. Most of the things we eat are from the farm. I try to plan a menu for the upcoming week on Sunday or Monday. Sometimes it takes longer. Since I typically go shopping once a week, I plan it for the next shopping trip. We are pretty flexible. You will also notice that we do not use wheat flour. We have some what of a gluten intolerance. So, I grind my own rice flour. We grow our own blue corn which I grind into meal. flour, or grits. We also try to eat as organically or naturally as possible avoiding highly processed foods or foods with lots of preservatives or sweeteners. We also primarily drink water. We have juice and drink it some, but I often use it to sweeten things such as oatmeal, cakes, muffins, etc. I will include recipes at a later time.



MONDAY


Breakfast:


Blue Corn Grits (grown in our garden)


Eggs ( free from our neighbor. Thanks, Mr. Boston!)


Grapes (on sale last week at Kroger 99 cents per pound)





Lunch:


Hamburgers (from beef we raised)


Potatoes (from Walmart, we just finished our from last years garden about a month ago! Thus, we are planting more this year!)


Canned peas (from my grandmother, Thanks, Mamaw!)


Snack:


Free range all day apple slices, carrot sticks, and celery sticks (fill up a three bowls immediately after breakfast and leave on the table for the children to eat on all day)


Supper:


Beefy Jalapeno Corn Bake (beef, jalapenos, corn meal all from our garden!) [I will make an extra batch for the freezer]


Green beans (from our garden)


Okra (from our garden)


Applesauce with cinnamon(from the apples in our orchard!)


TUESDAY


Breakfast:


Applesauce Oatmeal Muffins (applesauce from apples in our orchard, oatmeal from Walmart, eggs from neighbor, other ingredients from misc. places. I will also add pecans to the muffins for protein. The pecans came form my brother's trees. Thanks, Buddy!)


Snack:


Apples, carrots, celery


Lunch:


Salmon Salad on Rice cakes (Salmon from Walmart, mixed with mustard (free from Ingles weeks ago), squash pickles (canned from our garden), Rice cakes free from Kroger a few weeks ago


Supper: Left overs from Monday


WEDNESDAY



Breakfast:



Puffed Rice Cereal and Goat Milk and strawberries (I get cereal in bulk from http://www.amazon.com/ I use this cereal in granola, as a bread crumb substitute, and many other ways. I get amazon gift certificates by searching through SWAGBUCKS instead of using google or another search engine. The goat milk is from Walmart, but we should have our own very soon! The strawberries are frozen which I picked up from Earthfare on closeout a few weeks ago. They were free with overage because I had a coupon.)



Lunch:



Peanut Butter and Jelly Tacos (PB from Bargain Barn aka United Grocery Outlet, Jelly from blackberries on our farm which I canned last year, corn tortillas)



Supper:



Pecan Crusted Salmon, rice, broccoli (salmon from Walmart, rice free from Kroger several weeks ago, and broccoli from our garden)



THURSDAY



Breakfast:



Waffles, Eggs, and Fruit (Gluten Free Waffles, $1 a box from Kroger (sale and coupon), eggs from neighbor, canned fruit free with coupon at walmart)



Lunch:



Leftover hamburgers from Tuesday



Supper:



Meatloaf, mashed potatoes, okra, apple crisp (I canned apple pie filling last year from our apples. There are lots of quick easy meals to do with them!)



FRIDAY
Breakfast:



Oatmeal with Apples and pecans



Lunch:



Leftovers from previous meals



Supper:



Leftovers from Thursday



SATURDAY



Breakfast:



Waffles and Sausage (gluten free waffles from Kroger, sausage in freezer given by my parents Thanks, Momma and Daddy!)



Lunch:



Turkey Tortillas, carrot sticks, apple slices (Hormel Turkey from Ingles)



Supper:



Spaghetti Squash Supper (spaghetti squash from our garden, meat from our farm, other ingredients from various places)



Fried Green Tomatoes (green tomatoes in freezer from last years garden)



SUNDAY



Breakfast:



Oatmeal and Homemade Beef Sausage, fruit salad



Lunch:



Taco Salad (lettuce will either be from garden or from my mother-in-law, Thanks, Mom! Beef, onions, peppers from garden)



Supper:



Leftovers

That gets menus for a week. I will add pictures(hopefully!) to the post as I make things. I will also add some recipes.








Our Garden







Here are some pictures of our Garden. We began our Spring garden around the first of March. So far we have planted peas, potatoes, onions, broccoli, cauliflower, turnips, lettuce, spinach, carrots, kale, tomatoes, and peppers. I just planted the peppers and tomatoes on Saturday, but forgot to take pictures. I will get some pictures as soon as it stops raining! We still have beans, corn , squash (both winter and summer varieties), okra, watermelon, pumpkin, and lots of other things to plant.



In the picture above, you can see the area of soil which has not been tilled. My wonderful husband spent Saturday tilling the garden so that I could plant the peppers and tomatoes. Just where the boys are standing are where the onions are planted.




Our broccoli is just about ready to harvest! I can not wait! Fresh broccoli from the garden is the best! The children love it too! We planted it around the first week of March!












To the right are rows of turnips, carrot, lettuce, etc. There are also potatoes just to the right.


This picture (to the left) shows our peas. Since these pictures were taken, my wonderful husband has tilled the garden for planting more potatoes. The children and I have also weeded. The oldest child, Timmy. loves to use our little old time cultivator. I will have to post pictures of it when I post the peppers and tomatoes.

Working on the Weekend








We had an absolutely beautiful Thursday, Friday and Saturday in East Tennessee. A few weeks ago I picked up each child their own trowel for a $1 each at Target. They worked great in encouraging help from the kids. Also, now they have their own trowel and do not have to use mine and misplace it! The children and I prepared the flower bed on Thursday. On Friday, we went to a local high school greenhouse (the one where my brother teaches) and bought lots of bedding plants as well as some vegetable plants. I let the children design and plant the flower bed. Getting plants at your local high school greenhouse is an awesome deal! These plants are raised by the students and all of the money from the sale of the plants supports the FFA. I was once an FFA Horticulture student selling plants. It is a great experience. The best part about buying from them is you know the origin of your plants! Contact your local high schools to see if they have a Horticulture program and a greenhouse.





In the Knoxville, Tennessee area there are several high schools which participate. The two I frequent are Anderson County High School (where my brother teaches) and Lenoir City High School (just south west of Knoxville where I went to school and also taught AG).





Enjoy the pictures! You can see in the one to the right that even the baby was out there helping too! I did but him a trowel for the future! He loved being outside. Also, just as we were finishing up, we saw the first hummingbird! They absolutely love the Salvia (the red flowers also called Scarlet Sage).

Blog of the Week

Each week I am going to try to highlight a specific blog I enjoy. The blog for today is Saving Your Cents. Lissa Miller does a fantastic job of posting deals for you each week.

Reasons I like this blog:


  • At the beginning of each store deal, she lists what is free for the week at that particular store. By listing it at the beginning, I do not have to scan for frees.

  • She has a well rounded list of deals.

  • If she does not have the deals, she points you to someone who does.
  • She responds to my emails and comments! A big plus!
  • She is also in Georgia, so deals which pertain to particular regions or stores are often the same as here in East Tennessee.
  • Her blog is one of the ones who helped me begin my adventures of couponing.

Organic Coupons Galore!

Yesterday at Kroger, I found a display of Organic Coupon Booklets! There are over $12 in coupons for organic items. They expire August 31, 2009. There is a link here where you can check to see if you will have these coupon books in your area. Just enter your zip code! Often Kroger will have organic items on manager special and with these coupons items will be really cheap or free!
UPDATE: I found these booklets at two different locations in two different stores. The first store had them in the middle of an aisle on a display rack in the Organic Food Section. The Kroger Market Place store had them on an end cap with several other brochures in the Organic Foods Section.
