Menu From the Farm with Recipes

Last week’s menu totally slipped my mind. I did plan a menu, I just forgot to post it! Here is this weeks menu! I am beginning to work on cleaning out my freezer to make room for our beef we will get in January!

Sunday

Breakfast- Grits, Applesauce Blueberry Oatmeal Muffins, Turkey Bacon

Lunch- Wyatt’s Birthday Party Hotdogs, chili, slaw, chips, cake, ice cream

Supper- Snacks, if we are even hungry!

Monday

Breakfast- Sausage Gravy on Bagels

Lunch- Leftover hotdogs and other sides from party!

Supper- White Chili, Blue Cornbread

Tuesday

Breakfast- Grits, eggs, applesauce

Lunch- Peanut Butter and Jelly on Gluten Free Bread

Supper- Roast, Mashed Cauliflower, Fried Okra

Wednesday

Breakfast-  Fruit Smoothies

Lunch-  Tuna Salad Melts on Rice Cakes

Supper- Leftovers Quiche, green beans, carrots

Thursday (on the go!)

Breakfast- Date Bars

Lunch- Trail Mix, apples

Supper- Fried Chicken, mashed potatoes, greens

Friday

Breakfast- Oatmeal, apple slices

Lunch- Corn dog muffins, carrot sticks

Supper- Date Night

Saturday

Breakfast- Fried Oatmeal Patties with Maple Syrup

Lunch- Homemade turkey soup (I canned last year after Thanksgiving), Blue Cornbread

Supper- Steaks and hamburgers, green beans, baked potatoes

 

Recipes

  • Sausage Gravy

1 pound sausage (I used some I had frozen which was All Natural without any MSG or other preservatives)

1/4-1/2 cup flour (I use rice)

4 cups milk

Brown sausage in large skillet. Add flour and stir. Gradually add milk and whisk mixture. Cook over medium heat until thick and bubbly.

  • Applesauce Blueberry Walnut Oatmeal Muffins

Ingredients

1-1/2 cups quick-cooking oats

1-1/4 cups all-purpose flour (I use Rice)

1/2 cup packed brown sugar

1 teaspoon baking powder

3/4 teaspoon baking soda

3/4 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup unsweetened applesauce

1/2 cup fat-free milk

3 tablespoons olive or coconut oil

1 egg white

1 cup blueberries

1 cup chopped walnuts, pecans, or other nut

TOPPING:

1/4 cup quick-cooking oats

1 tablespoon brown sugar

1/8 teaspoon ground cinnamon

1 tablespoon butter, melted

Directions

In a large bowl, combine the first seven ingredients. In another bowl, combine the applesauce, milk, oil and egg white. Stir into dry ingredients just until moistened. Gently fold in blueberries and walnuts. Fill muffin cup liners coated three-fourths full.

Combine topping ingredients; sprinkle over batter. Bake at 400° for 16-18 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to a wire rack. Yield: 10 muffins.

 

  • Mashed Cauliflower

Cook cauliflower until very tender. Drain.  Mash with mixer. Add butter, salt, and pepper to taste. Great low carb alternative to Mashed Potatoes!

  • White Chili (I invented this recipe today because I did not like the ones in my cookbook)

2 pounds chicken, cubed

2 15 oz. cans Cannellini beans, navy beans, or great northern beans

1 cup chopped onion

1/2 cup chopped green chili peppers

1/2 cup chopped celery

1 tbs. salt

1 tsp. oregano

2 quarts water (may need more)

Place all ingredients in a crockpot. Make sure there is enough water to adequately cover the chicken and other ingredients.)

  • Date Bars (The experimental recipe I made up which tastes similar to Larabars.)

Equal part dates and equal part nuts (pecans, walnuts, and almonds work great!). Combine in a food processor until ball forms. Flatten into bars. Eat raw or cook at 400 until desired crispness. Store extras individually wrapped in wax paper in freezer.

  • Corndog muffins- Use regular cornmeal muffin recipe. Add chopped hotdogs into batter before pouring into muffin liners! Children will love these!
  • Fried Oatmeal Patties- Take left over oatmeal and stir in raisins, chopped apples, chopped nuts, etc. Fry in a little bit of oil or butter and pour maple syrup over the top! Delicious! They are also great with homemade jelly!

    I like your idea for date bars. I have a similar recipe. You mix whatever finely chopped nuts with enough maple syrup to make a "crust". In the meantime soak your dates in orange juice and orange zest (1 orange). Puree that and spread over crust. Top with same crust ingredients. Delicious! (I suppose you could do apricots as a variation. I love those raw food bars, but they are expensive! And sometimes they have soy which we try not to OD on.)

  2. I am glad you enjoy the blog! Your recipe sounds delicious! I will have to try it! Yes, the raw food bars are expensive! We also avoid soy, but I have found the Lara bars to be soy, gluten, and dairy free! Thanks for sharing your recipe!
