Menu from the Farm

This week is another on the go week for us! Today is the only day I will be at home during the day until Saturday!

For Breakfasts:

Granola, muffins, quick trail mixes (dry cereal, dry fruit, raw nuts)

For Lunches:

Cheese, apples, other fruit, celery, carrot sticks (we will be eating out with friends one day)

For Suppers:

Crock pot! I am going to have chili, beef stew, and turkey and dumplings this week in the crock pot with leftovers in between. We will also be eating out a few nights at friends’ houses!

Chili Recipe

2 pounds ground beef

1 large chopped onion

1 large chopped bell pepper

1 small jalapeno pepper, chopped

1 small Anaheim green chili pepper, chopped

3 cups tomato sauce, stewed, or diced tomatoes

3 cans beans (15 oz. or so each) I use one can chili hot beans, one can great northern beans, and one can kidney beans

1 cup water

2 tbs. chili powder

1 tbs. salt

Brown ground beef, onions, and peppers in Dutch oven. Transfer to a slow cooker. Add remaining ingredients and cook on low 3-4 hours or until heated through. Serve with cornbread or corn chips, cheese, salsa, sour cream, black olives, etc.
